VANILLA THINS

Vanilla thins are a very thin, crisp, buttery cookie, easy to make with a crunchy, caramelised texture. Delicious with coffee or tea.



Ingredients 
1/4 cup unsalted butter, softened
1/4 cup sugar
A pinch of salt 
1 large egg
1/2 teaspoon vanilla
1/4 cup plus 1 teaspoon all purpose flour


Procedure 
Preheat oven to 350 degrees Fahrenheit. 
Beat butter, sugar and salt with an electric mixer at moderately high speed until pale and fluffy, about 2 minutes. Add egg, vanilla and then flour and mix at low speed until just combined. 
Drop level teaspoons of batter about 3 inches apart on buttered baking sheets. 
Bake cookies in batches until just golden around edges, 6 - 8 minutes. 
Cool completely on a metal rack and enjoy with coffee or tea.

BANANA - COFFEE SMOOTHIE

For all the coffee lovers in the house, how about this for a wake up call?  This coffee - protein smoothie is full of flavours and very refreshing! Ingredients  5 ripe bananas  Ground coffee (2 tbsps) Milk (1 cup) Sugar (2 tbsps) Procedure  Dissolve coffee in a cup of water and mix well.  Refrigerate for 5 hours or overnight.  Pour sliced bananas in a blender.  Add milk and sugar.  Blend until smooth.  Strain the coffee mixture into a glass or mug.  Add the banana milk mixture.  Give it a light stir.  Enjoy! .
