NIGERIAN PUFF PUFF

Ingredients . For about 25 balls of Puff Puff, you will need: 2 cups (250g) of Plain Flour 2 teaspoons of yeast (the one used in baking bread) ½ teaspoon ground nutmeg ½ cup granulated sugar (or to your taste) 3 pinches of salt Lukewarm water (for mixing) Vegetable Oil (for frying) Directions : -Mix salt, sugar, water, nutmeg and yeast. Set aside for 5 minutes. -Add flour and mix. -Let the mixture rise for approximately 1- 2 hours -In a large, sauce pan, pour vegetable oil into a pot, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls) and place on low heat. -Test to make sure the oil is hot enough by putting a ‘drop’ of batter into the oil. If it is not hot enough, the batter will stay at the bottom of the pot rather than rising to the top. -Using your hands grab a little bit of mixture at time and drop in the oil. -When the oil is hot enough, use a spoon to dish up the batter and another spoon or spatula to drop it in the oil, sort of

NIGERIAN FRESH FISH STEW (OBE EJA TUTU)

Nigerian fresh fish stew(obe eja tutu) is a healthy Nigerian stew that is cooked with fresh fish, tomatoes, peppers and spices. It is a great substitute for the Beef and chicken stew especially if you are watching your weight and also on a low calorie diet. Ingredients  Fresh Mackerel fish Fresh tomatoes  Red bell pepper (Tatashey) Cayenne pepper (Shombo) Scotch Bonnet (Atarodo) Ground crayfish  Curry  Thyme  Chopped onions  Pormo Palm oil  Salt  Seasoning  2 boiled eggs (optional) Procedure Place a pot on medium heat. Pour in the fish.  Add some water and salt.  Leave to boil on medium heat for 5 - 10 minutes. When it's ready, remove the fish and set the stock aside. While the fish is boiling, blend the tomatoes and pepper.  Place a pot on medium.  Pour in some palm oil. When it's hot (not bleaching), add the onions. Pour in the tomato /pepper puree. Add some salt, seasoning, curry and thyme.  Pour in the fish stock. Cover and leave to cook till the tomato stew completely lose

SHAWARMA

Everyone's favourite!!!!  No need to buy shawarma when you can make it yourself. Follow this easy recipe to a path of deliciousness.  Ingredients :  Flour wrap  Cabbage  Carrot Green beans, chopped (optional)  Boneless chicken, chopped  Seasoning  Salt  Chili powder  Black pepper  Ginger  Suya spice  Mayonnaise (1/2 cup)  Lemon or lime juice (1-2 tbsps)  Procedure  : Marinate the chicken for some minutes in seasoning, salt, ginger, black pepper, chilli powder and suya spice.  Combine the mayonnaise with lemon or lime juice.  Pour some of the mayo mixture into the cabbage, carrot and green beans. Mix all together.  After marinating the chicken, place on a greased grill pan and allow each side for 3-4 minutes.  Spread the remaining mayo mix on the flour wrap.  Place the chicken chunks and cabbage mix and then fold up the flour wrap.  Place on a grill pan and allow each side for a few minutes.  Your shawarma is ready!!! 

BANANA - COFFEE SMOOTHIE

For all the coffee lovers in the house, how about this for a wake up call?  This coffee - protein smoothie is full of flavours and very refreshing! Ingredients  5 ripe bananas  Ground coffee (2 tbsps) Milk (1 cup) Sugar (2 tbsps) Procedure  Dissolve coffee in a cup of water and mix well.  Refrigerate for 5 hours or overnight.  Pour sliced bananas in a blender.  Add milk and sugar.  Blend until smooth.  Strain the coffee mixture into a glass or mug.  Add the banana milk mixture.  Give it a light stir.  Enjoy! . 

POTATO BALLS

Apart from delighting your taste buds, potatoes are good for those who wish to put on weight. Try out this potato balls recipe, really delicious and exciting! Credit : Tspices_kitchen Ingredients  Sweet potatoes, diced 2 eggs Minced meat  Green beans, chopped  Green peas  Carrots, grated  Onions  Salt  Seasoning Curry  Thyme  Pepper (optional) Breadcrumbs Flour  Vegetable oil (for frying)  Procedure  Fill your pot with water.  Pour in your potatoes. Add some salt and leave to boil till its very soft.  Pour the soft potatoes in a bowl. Using a spoon, mash it till it becomes a smooth paste. Set aside.  Get a pan. Add vegetable oil. Pour in some onions.  Add meat, seasoning, salt, curry, thyme and pepper.  Add the grated carrot, some green beans and peas.  Stir and leave to simmer. Set aside.  Scoop up a little of your mashed potatoes.  Mold and spread out of  your palm.  Scoop in the meat filling and gently seal it.  Roll into balls and set aside for coating.  Get 3 bowls.  Pour flour in

SUYA STIR - FRY RECIPE

Who doesn't love SUYA?? This is an incredible sauce, it's very easy to prepare and you'll be asking for more!! Credit :TSPICES _KITCHEN  Ingredients  Suya  Red pepper, chopped  Corn flour, 2 tbsps  Suya pepper, 3 tbsps  Soy sauce  Red onions, chopped  Spring onions, chopped  Carrots, diced  Vegetable oil  Green pepper, chopped  Green beans, chopped  Seasoning  Salt  Curry  Thyme  Procedure  Get a bowl.  Combine the corn flour and Suya pepper. Add little water, mix together into a thick or watery paste. Set aside. Place pan on fire.  Add some oil. When the oil gets hot, add the Suya bites. Stir fry for a few seconds. Add the onions (both red and spring onions), red pepper, green pepper, green beans and carrot. Add some spices, Thyme, curry, seasoning, salt and some Soy sauce. Add the flour and pepper mixture. Stir thoroughly and fry for a seconds. Viola!! Your Suya stir fry sauce is ready! Serve with rice or yam. 

STIR - FRY NOODLES

Begin your day with this delicious stir - fry noodles recipe.  Credit: raphiats_lifestyle Ingredients  Noodles  4 Bonga fishes  Onions  Bell peppers, chopped  Carrots, diced  Noodle seasoning and chili  3 tbsps of vegetable oil  Procedure  Cook the noodles on medium heat, strain and set aside.  Pour vegetable oil in a sauce pan, stir - fry the onions for a minute.  Pour in the deboned Bonga fish, pepper and carrots. Allow for 2 minutes.  Pour in the noodle seasoning and chili and allow for a minute.  Pour in the cooked noodles, stir for a minute.  Enjoy! 

SCOTCH EGG

Scotch Eggs are a delicious blend of boiled egg and sausage with a little kick of spice. Great for breakfast, appetizer, or a quick snack during your busy day. They’re simply delightful! Ingredients 4 Hard boiled eggs  2  pounds Sausage (hot dog) 1tbsp Nutmeg  4 cups dried bread crumbs (sub. Crushed corn flakes)  1 fresh egg, beaten  1 cup all-purpose flour  Pepper  Vegetable oil for frying  Procedure  Mash or grate your hot dog and put in a pan.  Add Nutmeg and pepper and mix together.  Break your egg in a separate bowl, whisk and set aside.  Pour bread crumbs( or crushed corn flakes) in a separate bowl and set aside. Sieve flour in another bowl and set aside.  Now, take a portion of the hot dog mix, wrap it round the egg (make sure it completely covers the egg)  Pass it through the flour, then the beaten egg and lastly through the bread crumbs and then set aside.  Repeat the process for the remaining eggs.  Deep fry until golden brown.  Enioy with a chilled drink!

VANILLA THINS

Vanilla thins are a very thin, crisp, buttery cookie, easy to make with a crunchy, caramelised texture. Delicious with coffee or tea. Ingredients  1/4 cup unsalted butter, softened 1/4 cup sugar A pinch of salt  1 large egg 1/2 teaspoon vanilla 1/4 cup plus 1 teaspoon all purpose flour Procedure  Preheat oven to 350 degrees Fahrenheit.  Beat butter, sugar and salt with an electric mixer at moderately high speed until pale and fluffy, about 2 minutes. Add egg, vanilla and then flour and mix at low speed until just combined.  Drop level teaspoons of batter about 3 inches apart on buttered baking sheets.  Bake cookies in batches until just golden around edges, 6 - 8 minutes.  Cool completely on a metal rack and enjoy with coffee or tea. 

PINEAPPLE - BANANA SMOOTHIE

This will really go well with dinner.  Very easy to make, with a refreshing taste.  100% natural!! Ingredients  3 ripe bananas 1 ripe pineapple  2 cups of full cream milk  Sugar or honey (2 tbsps)  Ice cubes Procedure : Peel the fruits, wash and cut into sizeable bits.  Put fruits in a blender, add milk and sugar or honey.  Blend for about 2 minutes.  Add ice cubes and blend until very smooth.  Pour into a smoothie cup and enjoy with your dinner!!

                             BEEF SAUCE    Try this recipe for lunch and thank me later.  Credit: raphiats_lifestyle Ingredients : Beef Meat stock  Vegetable oil  Soy sauce  Oyster sauce  Sesame oil Seasoning  Ginger  Pepper flakes  Salt Onions  Baking soda (1 tbsp ) Cornstarch(2 tbsp) Bell peppers  Sugar (2 tbsp) Procedures : Place beef in a bowl. Add salt, seasoning, ginger, baking soda and pepper flakes. Marinate for 30 minutes to 1 hour.  Combine soy sauce, sesame oil, oyster sauce, cornstarch, sugar and meat stock together. This forms the brown sauce. Heat up vegetable oil in a saucepan. Stir fry the beef on medium heat until tender. Scoop out the beef and set aside.  Pour in onions and allow for a minute.  Pour in bell peppers, followed by the brown sauce. Allow for a minute.  Pour in beef and allow for a minute.  Give it a final stir and your beef sauce is ready. Serve with rice or pasta. Enjoy!!
