POTATO BALLS

Apart from delighting your taste buds, potatoes are good for those who wish to put on weight. Try out this potato balls recipe, really delicious and exciting!

Ingredients 
Sweet potatoes, diced
2 eggs
Minced meat 
Green beans, chopped 
Green peas 
Carrots, grated 
Onions 
Salt 
Seasoning
Curry 
Thyme 
Pepper (optional)
Breadcrumbs
Flour 
Vegetable oil (for frying) 


Procedure 
Fill your pot with water. 
Pour in your potatoes. Add some salt and leave to boil till its very soft. 
Pour the soft potatoes in a bowl. Using a spoon, mash it till it becomes a smooth paste. Set aside. 
Get a pan. Add vegetable oil. Pour in some onions. 
Add meat, seasoning, salt, curry, thyme and pepper. 
Add the grated carrot, some green beans and peas. 
Stir and leave to simmer. Set aside. 
Scoop up a little of your mashed potatoes. 
Mold and spread out of  your palm. 
Scoop in the meat filling and gently seal it. 
Roll into balls and set aside for coating. 
Get 3 bowls. 
Pour flour into one bowl, breadcrumbs in another and break eggs into the 3rd bowl and whisk. 
Dip your potato balls first into the flour, then in the egg, lastly coat with breadcrumbs. 
Repeat the process for all the potato balls. 
Heat vegetable oil in a frying pan. 
Drop the potato balls and leave to fry until it's golden brown. 
Place on paper towels and leave to cool. 
Serve with chilled juice or a smoothie!

NIGERIAN PUFF PUFF

Ingredients . For about 25 balls of Puff Puff, you will need: 2 cups (250g) of Plain Flour 2 teaspoons of yeast (the one used in baking bread) ½ teaspoon ground nutmeg ½ cup granulated sugar (or to your taste) 3 pinches of salt Lukewarm water (for mixing) Vegetable Oil (for frying) Directions : -Mix salt, sugar, water, nutmeg and yeast. Set aside for 5 minutes. -Add flour and mix. -Let the mixture rise for approximately 1- 2 hours -In a large, sauce pan, pour vegetable oil into a pot, until it is at least 3 inches (or about 5 centimeters) high (too little will result in flatter balls) and place on low heat. -Test to make sure the oil is hot enough by putting a ‘drop’ of batter into the oil. VANILLA THINS

Vanilla thins are a very thin, crisp, buttery cookie, easy to make with a crunchy, caramelised texture. Delicious with coffee or tea. Ingredients  1/4 cup unsalted butter, softened 1/4 cup sugar A pinch of salt  1 large egg 1/2 teaspoon vanilla 1/4 cup plus 1 teaspoon all purpose flour Procedure  Preheat oven to 350 degrees Fahrenheit.  Beat butter, sugar and salt with an electric mixer at moderately high speed until pale and fluffy, about 2 minutes. Add egg, vanilla and then flour and mix at low speed until just combined.  Drop level teaspoons of batter about 3 inches apart on buttered baking sheets.  Bake cookies in batches until just golden around edges, 6 - 8 minutes.  Cool completely on a metal rack and enjoy with coffee or tea.
