PLANTAIN PANCAKES

''I've been eating fried plantain too much!'' People may complain. Try this easy and delicious plantain pancakes recipe and thank me later!

Ingredients 
1 ripe plantain 
2 cups of flour 
3 tbsps of melted butter
2 eggs
1 tsp salt 
1 tsp Nutmeg 
2 - 3 tbsps of sugar
1 cup of milk 
Vegetable oil for frying 


Procedure 
Dice the plantain. Pour in a blender. 
Add in milk and blend together. 
Add in flour, eggs, butter, sugar, salt, nutmeg and blend till it has a smooth consistency.
Brush pan with oil and heat. 
Scoop batter into the pan. 
Fry on one side for a few seconds. 
Flip over to fry the other side when you start seeing bubbles. 
Repeat the process for the remaining batter. 
Serve and enjoy with warm milk, a smoothie or coffee!!

Ingredients . For about 25 balls of Puff Puff, you will need: 2 cups (250g) of Plain Flour 2 teaspoons of yeast (the one used in baking bread) ½ teaspoon ground nutmeg ½ cup granulated sugar (or to your taste) 3 pinches of salt Lukewarm water (for mixing) Vegetable Oil (for frying) Directions : -Mix salt, sugar, water, nutmeg and yeast.                              BEEF SAUCE    Try this recipe for lunch and thank me later.  Credit: raphiats_lifestyle Ingredients : Beef Meat stock  Vegetable oil  Soy sauce  Oyster sauce  Sesame oil Seasoning  Ginger  Pepper flakes  Salt Onions  Baking soda (1 tbsp ) Cornstarch(2 tbsp) Bell peppers  Sugar (2 tbsp) Procedures : Place beef in a bowl. Add salt, seasoning, ginger, baking soda and pepper flakes. Marinate for 30 minutes to 1 hour.  Combine soy sauce, sesame oil, oyster sauce, cornstarch, sugar and meat stock together. This forms the brown sauce. Heat up vegetable oil in a saucepan. Stir fry the beef on medium heat until tender. Scoop out the beef and set aside.  Pour in onions and allow for a minute.  Pour in bell peppers, followed by the brown sauce. Allow for a minute.  Pour in beef and allow for a minute.  Give it a final stir and your beef sauce is ready. Serve with rice or pasta. Enjoy!!

NIGERIAN FRESH FISH STEW (OBE EJA TUTU)

Nigerian fresh fish stew(obe eja tutu) is a healthy Nigerian stew that is cooked with fresh fish, tomatoes, peppers and spices. It is a great substitute for the Beef and chicken stew especially if you are watching your weight and also on a low calorie diet. Ingredients  Fresh Mackerel fish Fresh tomatoes  Red bell pepper (Tatashey) Cayenne pepper (Shombo) Scotch Bonnet (Atarodo) Ground crayfish  Curry  Thyme  Chopped onions  Pormo Palm oil  Salt  Seasoning  2 boiled eggs (optional) Procedure Place a pot on medium heat. Pour in the fish.  Add some water and salt.  Leave to boil on medium heat for 5 - 10 minutes. When it's ready, remove the fish and set the stock aside. While the fish is boiling, blend the tomatoes and pepper.  Place a pot on medium.  Pour in some palm oil. When it's hot (not bleaching), add the onions. Pour in the tomato /pepper puree.
