Nigerian fresh fish stew(obe eja tutu) is a healthy Nigerian stew that is cooked with fresh fish, tomatoes, peppers and spices. It is a great substitute for the Beef and chicken stew especially if you are watching your weight and also on a low calorie diet.
Ingredients
Fresh Mackerel fish
Fresh tomatoes
Red bell pepper (Tatashey)
Cayenne pepper (Shombo)
Scotch Bonnet (Atarodo)
Ground crayfish
Curry
Thyme
Chopped onions
Pormo
Palm oil
Salt
Seasoning
2 boiled eggs (optional)
Procedure
Place a pot on medium heat. Pour in the fish.
Add some water and salt.
Leave to boil on medium heat for 5 - 10 minutes. When it's ready, remove the fish and set the stock aside.
While the fish is boiling, blend the tomatoes and pepper.
Place a pot on medium.
Pour in some palm oil. When it's hot (not bleaching), add the onions.
Pour in the tomato /pepper puree.
Add some salt, seasoning, curry and thyme.
Pour in the fish stock. Cover and leave to cook till the tomato stew completely loses its sourness.
Add in the pormo and the fish.
Drop in the boiled eggs.
Leave to fry for a few minutes.
Take it off the heat when it's ready. (You'll know its done when the oil seperates from the tomato and flows on the top)
